This was my first time ever having or making monkfish and I have to say I was so surprised!!! They say monkfish is a “poor man’s lobster” and that description couldn’t be more perfect! I’ts mild and meaty and has a lobster like taste.
I marinated the monkfish in Italian seasoning and then grilled it on both sides (10 minutes each side).
How perfect is that appetizer? I’m just so in love with zucchini and this warm grilling weather!!!
There ya have it! Grilled monkfish, leek mashed potatoes, arugula drizzled with olive oil, and grilled asparagus.
Marinate monkfish in Italian dressing and grill for 10 minutes on each side.
Leek Mashed Potatoes
1 russet potato
2 tablespoons heavy cream
2 tablespoons parmesan cheese
1/2 tablespoon basil
2 chopped leeks
Peel 1 russet potato and slice into small chunks. Boil until fork tender. Drain. Add to mixer with 2 tablespoons heavy cream, 2 tablespoons parmesan cheese, 1/2 tablespoon basil, 2 chopped leeks and a sprinkle of salt and pepper.
