Green Goddess Salad

Screenshot_2017-04-05-19-39-48-1As promised, I’m staying true to my salad obsession lately and sharing all of the recipes with you!  The warm roasted squash & brussels sprouts salad was pretty delicious yesterday and might be one of my favorites.  However, this green goddess salad will knock your socks off!

There’s something so beautifully healthy about the color green.  You want to feel healthy? Eat some greens!  Want a detox drink? Drink a green drink! Green is everyone’s new healthy obsession….and for good reason!  Green vegetables are a great source of vitamins, avocados are high in potassium, and broccoli is a cancer fighter!! Screenshot_2017-04-05-19-39-22-1

I recently watched a Ted Talk (I’m totally obsessed with Ted Talks) where neuroscientist Sandra Aamodt proves to us that dieting doesn’t work.  You can find the Ted Talk here.  She shows us that if we incorporate the below four healthy habits into our lifestyle that we can take control of our health by taking control of our lifestyle, regardless of our weight.

  1. Eating enough fruits/veggies
  2. Exercising at least 3x a week
  3. Not smoking
  4. Drinking in moderation

Basically, you’re going to live longer & be healthier if you do the above 4 things (regardless of your size/weight).


So, instead of obsessing about dieting and what we “shouldn’t” eat… how about we just add more fruits and veggies to our diet and live a healthier life?  How about we incorporate exercise at least 3x a week?  30 minutes a day, 3 times a week? Guys… that’s nothing!  To live a healthier life?? Sign me up!  Anyway, my point here is, eating beautiful healthy green salads isn’t a “chore” when you’re eating what you enjoy.  Don’t eat boring old salads… let me help you to find a fun salad creation you love!!


Green Goddess Salad


3-4 c baby spring mix lettuce

1 c chopped broccoli

1/2 avocado

1 c blueberries

1/2 c cranraisins

1/4 c sunflower seeds

I drizzled balsalmic vinagrette on top of my green goddess salad and it was delicious!  This salad would also be fun with some fresh tart green apples sliced up & added on.  You could also use a raspberry vinagrette…. yum!!!
